keto paleo crack slaw

This crack slaw recipe has become a staple in my meal plan. I originally started cooking with cabbage when I had digestion issues. Cabbage helps heal your stomach lining, including ulcers. It’s also often given to those who suffer from acid reflex or hiatal hernia.

Crack slaw is simply an egg role in a bowl. People just call it crack slaw because it’s so tasty, you can’t stop eating it!

My Keto and Paleo friendly crack slaw recipe is a little different from most because I have the added goodness of MCT oil. This non-gmo MCT oil is sourced from 100% coconut oil and is great for those wanting to boost their healthy fats. I purchased it to help balance out my hormones since saturated fats helps boost cholesterol, which women need in order to balance their hormones. Ingredients:

  • 1 lb ground turkey
  • 1/2 onion chopped
  • 3-4 cups of chopped green cabbage
  • 2 carrots, thinly sliced
  • 3 cloves crushed garlic
  • 4 tablespoons coconut aminos (soy sauce substitute)
  • 1/2 inch of fresh ginger (grate)
  • 2 tablespoons MCT oil
  • 2 green onions
  • Opt: sesame seeds and crushed red pepper (garnish)

Directions:

  1. Brown the ground turkey with the chopped onion in a stir fry sized skillet. Add the crushed garlic, carrots and the coconut aminos when it’s almost cooked.
  2. Add cabbage and ginger. Put lid pan (if there is one) and let simmer for low for 5 to 10 minutes till cabbage is softened.
  3. Take off heat, add green onions, MCT oil and garnishes.

This deconstructed egg roll takes less than 30 minutes to make and makes 4 bowls.
